Ingredients

  • 1 sheet frozen puff pastry thawed
  • ½ cup fresh strawberries sliced
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries
  • 1 tablespoon maple syrup or honey optional
  • 1 egg for egg wash
  • 2 tablespoons low-fat cream cheese or Greek yogurt optional spread
  • ½ teaspoon vanilla extract
  • Optional: powdered sugar for dusting mint leaves for garnish

Instructions

  • Preheat Oven:
  • Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  • Prepare Pastry Base:
  • Roll out thawed puff pastry slightly on a floured surface. Place on the baking sheet and lightly score a 1-inch border around the edges (do not cut all the way through). This helps create a raised crust.
  • Egg Wash and Bake Base:
  • Beat the egg and brush the border with it. Bake for 15–18 minutes or until golden and puffed. If the center puffs too much, gently press it down with a spoon once out of the oven.
  • Add Spread (Optional):
  • While cooling, mix cream cheese or Greek yogurt with a touch of vanilla and maple syrup. Spread a thin layer over the cooled pastry base.
  • Top with Berries:
  • Arrange sliced strawberries, blueberries, and raspberries over the top. Drizzle with a bit of honey or maple syrup if desired.
  • Garnish and Serve:
  • Dust with powdered sugar and garnish with mint. Slice and serve immediately.

Notes

  • Keep puff pastry cold until baking — it helps with a better rise and crispness.
  • Use parchment paper to prevent sticking and for easier cleanup.
  • Don’t overload with fruit — use fresh berries with minimal moisture to avoid a soggy crust.
  • For extra crunch: Sprinkle almond flakes or chopped pistachios before baking.
  • Make it vegan: Use a plant-based puff pastry and skip the egg wash (use almond milk instead).
  • Make ahead tip: Bake the base in advance and assemble toppings right before serving.
  • Try other combos: Sliced apples + cinnamon, peaches + basil, or banana + dark chocolate chips.
  • Storage: Best eaten fresh, but leftovers can be kept in the fridge for 1 day (re-crisp in the oven).
